Processing the tomatoes in a food mill - used in the recipe Tomato sauce

 

After having peeled the tomatoes, pass them through a food mill (use the finest discs). Having completed this, also pass the scooped out tomatoes you previously collected into a small container.

 

A few rounds into the mill, then discard the remaining seeds left in top side of the mill.

 

With a spoon, collect what you can see in the bottom of the mill and put in into the pan.

 

You can now see the smooth and thin “passata di pomodoro”. A good passata should not contain any seeds. Then, you can proceed as instructed in the main recipe.
