Baby tomato salad

Baby tomato salad (a.k.a. Insalata di pomodorini)

I would describe it as “the simplest things always work better”. In my opinion, there is nothing better than olive oil and vinegar to season any salad.

 

Ingredients:

 

 

  • Baby tomatoes
  • Red wine vinegar, alternatively, if you like a stronger flavour, you can use balsamic vinegar
  • Extra virgin olive oil
  • Oregano or Basil
  • Salt for seasoning

 

Directions:

 

Buy some baby tomatoes, better if they are ripened on the vine. Then, half them and put them into a small bowl.

 


Sprinkle with some drops of extra virgin olive oil.

 

Sprinkle with few drops of vinegar (not too much).

 

Add some oregano or, as alternative, 4-5 leaves of fresh basil.

 

Add a pinch of salt.

 

Stir everything together and serve as a side dish.
