First time on your site and must say am very impressed with your recipes and how authentic they are. Am going to try the chicken and peas tomorrow and will let you know how it turns out. Is not a great deal for main meal so am hoping you will expand a little.

Hi Guys, Have tried several of your receipes and must say with your attention to detail as far step by step instructions they all turned out as they should have. Again after going to different sites yours is the most "home cooking" I have come across. Keep up the great work and keep those receipes coming. Joanne

Dear Joanne,

I am happy you've found our website interesting and I want to thank you for your nice comment. I know that, as you said, there are not many main meal recipes available at the moment; this is mainly due to the fact that we spend lots of time to describe each recipe in details, so it takes time before building a considerable repertoire. Most of the websites are about hundreds of recipes with lots of blah..blah..blah..text and they don't give any comment about cooking techniques or how to prepare certain ingredients or how to choose them, they just take everything for granted, supposing that everybody knows exactly what to do.

I will tell you a little story. Recently I went to the supermarket (one of the biggest we have here in the UK) and bought an octopus. The young man at the fishcounter asked me if I wanted it clean and I said yes, that's a good idea, thank you. When I went home, I have discovered that he only took the beak off and the octopus was not cleaned at all. Unfortunately, he didn't have any clue about how to deal with an octopus (from this you can imagine the training they receive nowadays!)and if the customer did't have a clue about how to clean an octopus, what could have happened?
With this I am trying to say that what we do, with our website, is to give people as much information as we can about the stuff we cook, with the aim to make them confident with the recipe and with the dealing of the ingredients they are going to use (look at some of the top tips to see what I mean).

In addition, with the step by step photo sequence, people can see exactly how the recipe should look like through the different stages of preparation, so people can have a confirmation of what they are doing, that's it. It's a website for both the experienced cooks, who can gather new ideas, and the less experienced, who can build the fundamentals of the Italian cooking in a very effective way.

I promise, after my summer holiday, I will look at the main meal section and see what I can do with the main meals.
