 These videos from youtube will give you a very good idea about how to make fresh tagliatelle, using a rolling pin. This traditional method is very popular in the Emilia Romagna region of Italy and the traditional way to eat tagliatelle is to top them with a good ragu` sauce (in Italy there's no such thing as spaghetti bolognese!). Buy a long rolling pin (120 cm long), some "00" flour , eggs (one medium egg every 100 g of flour) and give it a go!
